Recipe Wednesday - Cauliflower Rice

Recipe Wednesday means I bring you a great recipe to consider for your collection.  My intention is to bring you delicious recipes featuring better food choices.  Let's face it, if it doesn't taste good, you won't eat it no matter how good it is for you.  Today's feature is Cauliflower Rice!

What you need:
a small head of cauliflower, coarsely chopped
1 small onion, chopped finely (best in a food processor)
2 tablespoons of butter
1-2 tablespoons of coconut oil
Aleppo chile finishing salt
Trader Joe's 21 seasoning salute
salt and pepper

Directions:
After coarsely chopping the cauliflower, give it a spin in the food processor, pulsing until it resembles the texture of couscous or rice grains.  Saute the onions in the melted butter and coconut oil over medium heat until translucent.    When the onions are soft, dump in the processed cauliflower and stir until well mixed with the fats and onions.  Season then cover skillet and continue to cook for 5 to 10 minutes until softened.  Season more if desired after tasting.  
Change up the seasoning and customize to your tastes.  One head of cauliflower will make approximately 6 servings.
