Recipe Wednesday - Move Over Cookie, Here Comes Santa Clause

Recipe Wednesday means I bring you a great recipe to consider for your collection.  My intention is to bring you delicious recipes featuring better food choices.  Let's face it, if it doesn't taste good, you won't eat it no matter how good it is for you.  Today's feature is Strawberry Santas...and just how cute is this!

Move over Christmas cookie, here comes Santa Clause.  Wow your friends when you bring these cute, healthy treats for the holiday spread this season.  Quick, cute as a bug's ear and a healthy alternative to cookies, you'll be a hero.

1. Rinse strawberries and cut around the top of the strawberry. Remove the top, (enough for a hat). Clean out the whole strawberry with a paring knife, if necessary (some of them are hollow already. Prep all of the strawberries and set aside.

2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or Ziploc with the corner snipped off. Fill the strawberries with cheesecake mixture.

3. Once strawberries are filled, top with the 'hats.' Decorate according to photo.

4. If not serving immediately, refrigerate until serving.
