Microwave Coffee Cup Scramble

Eggs are not as high in cholesterol as once thought and they pack a lot of protein in a small package.  Eggs also are a naturally good source of Vitamin D, which plays an important role in Calcium absorption.  Calcium is the building block of strong bones.   There's no excuse for missing breakfast with this fast and easy recipe.

What You Need

2
EGGS
2
Tbsp. milk
2
Tbsp. shredded Cheddar cheese
Salt and pepper

Here’s How

  1. COAT 12-oz. microwave-safe coffee mug with cooking spray. ADD eggs and milk; beat until blended.
  2. MICROWAVE on HIGH 45 seconds; stir. MICROWAVE until eggs are almost set, 30 to 45 seconds longer.
  3. TOP with cheese; season with salt and pepper.
